Pasta House Salad copycat recipe

If you live in St. Louis, you have undoubtedly had Pasta House Company's famous salad. It's probably my favorite salad! I can eat it every single day and not get tired of it. I love to make my version of it for family gatherings. It's quick and easy, as any good salad should be, with crisp romaine and crunchy iceberg. Add a couple pantry staples like canned or jarred artichoke hearts, diced pimentoes, thinly sliced red onion, and grated parmesan cheese and simple, homemade dressing and you have the best salad ever.

Even though this salad comes together really fast, you can make it even faster by buying chopped, bagged romaine and iceberg lettuces. Get the can of quartered artichoke hearts and pre-grated parmesan cheese. The kind in the green shaker canister works perfectly fine in this salad.

I use an empty, recycled 16-ounce jar for the dressing which is just red wine vinegar, good olive oil, salt, pepper, garlic powder, and more parmesan cheese. Shake it up and pour over the salad. Give it a good toss and you're set. Some folks like the salad to marinate for 30 minutes or so before serving, but I dress it right before serving. It's great either way. Pasta House Salad copycat recipe

Here's a copycat recipe of a St. Louis favorite, Pasta House Salad. My version is little more flavorful with the addition of garlic to the salad dressing. It comes together quickly and will be a family favorite.

Pasta House Salad copycat recipe

  • 1 head romaine lettuce, washed & chopped
  • 1 head iceberg lettuce, washed & chopped
  • 1 can artichoke hearts, quartered or chopped smaller (15 ounces)
  • 1 jar diced pimentoes (4 ounces), drained & blotted with paper towels
  • 1 small red onion, thinly sliced
  • 1.5 cup grated parmesan cheese, divided ((reserve ½ cup for dressing))

Dressing

  • ¼ cup red wine vinegar
  • ⅔ cup light olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon garlic powder
  1. Add lettuces to a large serving bowl.

  2. Add artichokes, drained pimentoes, and onion.

  3. Sprinkle with 1 cup parmesan cheese.

  4. Add dressing, toss and serve.

Dressing

  1. Add vineagar and oil to shaker jar.

  2. Add salt, pepper, garlic powder, and remaining half cup fo parmesan cheese.

  3. Shake well and pour over salad. Toss well to coat.
