- 3 cups whole oats
- ½ cup shelled sunflower seeds (or seed of your choice)
- ½ cup sliced almonds (or nut of choice)
- ⅔ cup roughly chopped pecans (or walnuts or other nut of choice)
- ½ cup unsweetened, flaked coconut
- 1 cup raisins (or dried fruit of choice)
- 2 teaspoons ground cinnamon
- 1 teaspoon sea salt
- ⅓ cup honey
- ⅓ cup pure maple syrup
- 3 tablespoons coconut oil, melted
- 1½ teaspoons vanilla extract
- 1 teaspoon almond extract
Heat oven to 300 degrees. Line baking sheet with parchment paper.
If using raisins, add them to a small bowl or liquid measuring cup. Cover with boiling water to plump them up. Or cover with water and microwave 1 minute 30 seconds. Set aside.
Add oats to a large mixing bowl.
Add seeds, nuts, coconut, cinnamon, and sea salt to the oats.
Stir to mix ingredients well.
Drain raisins and pat dry. Add raisins, honey, maple syrup, coconut oil, and extracts to the oat mixture.
Spread evenly over parchment lined sheet. Bake for 30-40 minutes or until lightly browned.
Cool completely on baking sheet. Granola crisps more as it cools. Store in airtight container for up to 3 weeks.
