Ingredients
  

  • 1.5-2 lbs. fresh green beans, stem ends rimmed
  • 2 tablespoons olive oil
  • 1 lemon, zested and cut in half
  • salt
  • pepper
  • 4-5 slices thick cut bacon, cooked crisp, crumbled
  • 5 ounces feta cheese, crumbled

Instructions
 

  • Heat oven to 400 degrees. Arrange green beans on sheet tray.
  • Pour olive oil over green beans, toss lightly to coat.
  • Roast in oven 15-20 minutes or until starting to blister and brown on edges.
  • Remove from oven; squeeze lemon halves over green beans. Season with salt and pepper. Add lemon zest, feta cheese, and bacon. Toss to coat; transfer to serving dish and serve.
