Ingredients
- 1.5-2 lbs. fresh green beans, stem ends rimmed
- 2 tablespoons olive oil
- 1 lemon, zested and cut in half
- salt
- pepper
- 4-5 slices thick cut bacon, cooked crisp, crumbled
- 5 ounces feta cheese, crumbled
Instructions
- Heat oven to 400 degrees. Arrange green beans on sheet tray.

- Pour olive oil over green beans, toss lightly to coat.
- Roast in oven 15-20 minutes or until starting to blister and brown on edges.
- Remove from oven; squeeze lemon halves over green beans. Season with salt and pepper. Add lemon zest, feta cheese, and bacon. Toss to coat; transfer to serving dish and serve.
