I love the combination of chocolate and peanut butter. It’s such a satisfying combo! Why buy store-bought peanut butter cups when you can quickly make a healthier version that tastes much better? No preservatives, stabilizers, or additives, but lots of satisfaction.
You probably have most of these ingredients in your pantry, which makes it even faster. Oats, puffed rice cereal, peanut butter, honey, and chocolate chips. If you want to boost the protein factor, add a tablespoon of your favorite vanilla protein powder.
I start with organic rolled oats, but use what you like. Choose a puffed rice cereal with only one ingredient: puffed brown rice. I love Arrowhead Mills brand, but get what you like. Choose a local, raw honey like the one I buy from Lucky Dog Farm. The bees on the farm make this healthy sweetener full of antioxidants and polyphenols. It also has anti-inflammatory properties, unlike processed sweeteners. Or use pure maple syrup which has some of the same benefits as honey. Use your favorite chocolate chips or buy a bag with fewer ingredients to see what you think.
Whether you choose all organic ingredients or just a few, this tasty, no bake treat will become a family favorite. Healthy No-Bake Chocolate Peanut Butter Bites
Equipment
- mini muffin tin or use regular size for 24 large bites
Ingredients
- 1½ cups whole, rolled oats
- 1 cup puffed rice
- ¼ cup mini semi-sweet chocolate chips
- ⅓ cup honey or pure maple syrup
- 1 cup peanut butter
- 1 tablespoon vanilla protein powder (optional)
- 1½ cups dark or semi-sweet chocolate chips, melted
- Maldon flaky sea salt (optional, but highly recommended)
Instructions
- Combine oats, puffed rice, and mini chocolate chips in large bowl. Add protein powder if using.

- Add peanut butter.

- Add honey or maple syrup.

- Mix ingredients thoroughly. Press firmly into mini muffin tin or regular muffin tins or a combination of bowl, leaving enough room on top for melted chocolate.


- Top each peanut butter bite with melted chocolate and sprinkle with Maldon sea salt.

- Chill in freezer for about 15-20 minutes or until set. Remove from muffin tin with the edge of a spoon.

- Store airtight at room temperature. Enjoy!
