Make Ahead Gravy (Two Ways)

Flavorful turkey gravy that you make ahead with two options: slow and easy or fast and easy!

  • sheet pan
  • 4 quart Dutch oven
  • Gravy separator

Make Ahead Gravy - Slow & Easy

  • 3 lbs. turkey parts - legs work best ((may also use neck and giblets))
  • 2 teaspoons poultry seasoning OR ((1 t. salt, ½ t. pepper, ½ t. garlic powder, ¼ t. onion powder, ¼ t. rubbed sage))
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 carrot, cut in half lengthwise, then across
  • 1 celery stick, cur in half lengthwise, then across
  • 3 garlic cloves, smashed
  • ½ cup dry white wine
  • ¼ cup water
  • 8 cups water, or enough to cover turkey

Make Ahead Gravy - Fast & Easy

  • 1 small onion, minced finely
  • 4 tablespoons butter
  • 1 tablespoon Knorr chicken bouillon powder (or 2 Knorr cubes)
  • ⅓ cup flour
  • ¼ teaspoon pepper
  • 1 cup dry white wine
  • 3-4 cups turkey broth or stock ((can use chicken))
  • OPTIONAL: pan drippings from turkey, after separating with gravy separator

Make Ahead Gravy - Slow & Easy

  1. Heat oven to 400 degrees. Add turkey pieces to small rimmed baking sheet.

  2. Season with poultry seasoning, salt, and pepper.

  3. Pour wine and water into bottom of baking sheet.

  4. Roast in oven for 20 minutes. Turn oven temperature to 350 degrees. Roast additional 45 minutes.

  5. Transfer roasted turkey, vegetables, and all ingredients to Dutch oven or stock pot. Cover with water. Heat to simmer; cook until reduced by half.

  6. Strain liquid into bowl, pressing down on vegetables to get as much liquid as possible. Makes about 3 cups turkey stock.

Make Ahead Gravy - Fast & Easy

  1. Add onion and butter to Dutch oven. Cook over medium heat until onions are transparent.

  2. Whisk in Knorr bouillon, flour, and pepper. Cook and stir about 1 minute.

  3. Add white wine and whisk to smooth. Add turkey or chicken broth and whisk until thickened and smooth.

  4. Gravy should be thick enough to coat the back of a spoon and maintain a line when you run your finger across it.

  5. OPTIONAL: Add pan drippings from turkey after using gravy separator.
