Roasted Green Beans with Bacon, Feta, & Lemon

Blistered, roasted green beans with crispy bacon, salty feta, and tangy lemon are a fresh twist on green beans - upscale look, but everyday easy

  • sheet pan
  • 1.5-2 lbs. fresh green beans, stem ends rimmed
  • 2 tablespoons olive oil
  • 1 lemon, zested and cut in half
  • salt
  • pepper
  • 4-5 slices thick cut bacon, cooked crisp, crumbled
  • 5 ounces feta cheese, crumbled
  1. Heat oven to 400 degrees. Arrange green beans on sheet tray.

  2. Pour olive oil over green beans, toss lightly to coat.

  3. Roast in oven 15-20 minutes or until starting to blister and brown on edges.

  4. Remove from oven; squeeze lemon halves over green beans. Season with salt and pepper. Add lemon zest, feta cheese, and bacon. Toss to coat; transfer to serving dish and serve.
