- ¼ cup butter, cut into pats
- 1 cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 cup all purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup semi sweet chocolate chips
- ¼ cup chopped pecans, or nut of choice (optional)
Heat oven to 350 degrees. Grease 8"x8" metal baking pan; set aside.
In large microwave bowl, melt butter until just melted. About 1 minute. Add brown sugar to melted butter.
Whisk butter and brown sugar until blended. It will be a little dry looking.
Add egg and vanilla and whisk to blend.
Stir in flour, baking powder, and salt with a wooden spoon.
Stir in chocolate chips.
Add nuts, if using.
Spread in greased 8"x8" metal baking pan.
Bake for 18-20 minutes or unit set and just beginning to brown at edges. Cool to your desired serving temperature. These are great served warm with vanilla ice cream.
