Butterscotch Brownies

Need a quick treat? These chewy Butterscotch Brownies are the answer.

Butterscotch Brownies have a wonderful chewy, caramel-y butterscotch flavor, a touch of chocolate, and crunchy pecans. Mix up the batter in less than 10 minutes with pantry staples. Don’t like pecans? Leave them out. Want a different variety of chip? Try vanilla milk chips or milk chocolate. Butterscotch chips would work great in these, too.

My family has always loved Blonde Brownies (recipe coming soon). My youngest son requests them regularly. However, recently he challenged me to make smaller batches of treats and a smaller quantities of food. He doesn’t love leftovers and pointed out that there are only three of us living here now. He makes a great point. I hate having to waste food that doesn’t get eaten. 

Enter a NEW recipe that satisfies a craving for something sweet, but isn’t so much that it gets wasted in a few days: Butterscotch Brownies

Whip up a batch of these chewy brownies quickly and eat them warm, if you like. In less than a hour, you’ll have a great dessert or snack. Most likely you have all of the ingredients on hand. Experiment with the chocolate chip flavors and nut varieties. You can even swap out the nuts for sweetened flaked coconut with great results. Butterscotch Brownies

Pantry staples make these delicious chewy Butterscotch Brownies a perfect alternative to cookies or traditional brownies and they're fast and easy. They're ready to eat in 1 hour!

Equipment

  • 8"x8" metal baking pan

Ingredients
  

  • ¼ cup butter, cut into pats
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup semi sweet chocolate chips
  • ¼ cup chopped pecans, or nut of choice (optional)

Instructions
 

  • Heat oven to 350 degrees. Grease 8"x8" metal baking pan; set aside.
  • In large microwave bowl, melt butter until just melted. About 1 minute. Add brown sugar to melted butter.
  • Whisk butter and brown sugar until blended. It will be a little dry looking.
  • Add egg and vanilla and whisk to blend.
  • Stir in flour, baking powder, and salt with a wooden spoon.
  • Stir in chocolate chips.
  • Add nuts, if using.
  • Spread in greased 8"x8" metal baking pan.
  • Bake for 18-20 minutes or unit set and just beginning to brown at edges. Cool to your desired serving temperature. These are great served warm with vanilla ice cream.
