Yogurt Pie
What better way to start the summer cook out season than with a light, refreshing Yogurt Pie that takes 5 minutes to prepare and uses only 4 ingredients?
Yogurt Pie is one of the first, quick dessert recipes I created over 30 years ago. My father-in-law Jack was a big fan of fruit yogurt. He ate it nearly every day. One Memorial Day weekend, we were gathering my husband’s family for a barbeque. I was in charge of dessert. I love to make new things and create foods I think people will love. So I knew I wanted to use Jack’s love of yogurt in a dessert. This quick pie was a huge hit! He loved it so much! He would request it at least once a month. And he often asked when we stopped by, “Did you bring me a yogurt pie?” From then on it was known as Jack’s Yogurt Pie.
Memorial Day is this weekend and I have been thinking a lot about Jack and my dad. Even though Jack wasn’t a veteran, I think about him in patriotic terms because he had such a love of our country and valued and understood the complex issues of government. He knew so much about the world and read everything he could get his hands on. He went to the library at least twice a week and would always leave with a huge stack of books. They knew him by name there. He was the most well-read person I have ever known, just edging out my dad and brother for the title.
When our kids gather with us this Memorial Day weekend, we will eat great food. Jack’s Yogurt Pie will be on the menu. And we will tell stories of when the kids were little and Grandpa Jack would throw a ball up into the ceiling fan as it was spinning to get them to laugh. He would twist his ballcap around so the brim was in the back and distort his face to get a their reactions. No one laughed louder than he did. And I will tell the kids about how much Jack loved Yogurt Pie. And I will try my best not to cry at the distant memories.

Yogurt Pie
Ingredients
- 1 graham cracker crust (8 serving size)
- 1 tub non-dairy whipped topping, thawed (8 ounces)
- 1 container fruit yogurt of your choice (8 ounces)
- 1 cup chopped fresh fruit
Instructions
- To a large mixing bowl, add the thawed whipped topping.

- Add yogurt to whipped topping.

- Whisk whipped topping and yogurt together until just blended.

- Fold in chopped fruit.

- Pour into graham cracker crust.

- Smooth top. Refrigerate or freeze for at least one hour or until set.

- Serve with additional fresh fruit.
