Crock-Pot Crack Chicken Sandwiches

I love an easy crock-pot meal during the week. The work week can be super hectic around here, so I love a meal I can throw in the crock-pot before work. These Crack Chicken Sandwiches are a family favorite. I usually have most of these ingredients on hand, so layering them in the slow cooker is fast and easy. I set it on low and come home to a hearty dinner ready to serve.

I use boneless, skinless chicken breast, a packet of dry ranch seasoning mix, a packet of dry au jus mix, half a stick of butter, a block of cream cheese, and some pepperoncinis. I prefer the sliced pepperoncinis, but the whole ones work just as well. My husband is not a fan of heat, so he prefers the whole ones so he can pick them out easily. I know! That’s crazy behavior!

If you aren’t aquainted with slow cookers, they can be the working person’s best friend. It is so easy to throw in some ingredients in the morning and let them cook all day. There’s little to do once you get home. And most crock-pots have a feature that moves the food to warm after the cooking time. Ingredients
  

  • 2½ – 3 lbs. boneless, skinless chicken breasts
  • 1 pkt. dry ranch dressing mix
  • 1 pkt. dry au jus mix (or 2 Knorr Beef bouillon cubes)
  • ½ stick butter, cut into pieces
  • 8 ounces cream cheese, cut into pieces
  • 4 ounces pepperoncinis in juice (sliced or whole)

Instructions
 

  • Starting with chicken, layer ingredints in crock-pot and cook on low for 6 hours or high for 4 hours.
  • Shred chicken to mix all ingredients.
  • Serve on toasted buns. Enjoy!
