Quick & Easy Blonde Brownies

We love all kinds of brownies in this house, but this Quick & Easy Blonde Brownies recipe has been a family favorite for 30 years. Blonde Brownies are delicious, moist, and chewy with flavors of vanilla, butterscotch, and chocolate. They’re a perfect alternative to traditional fudge brownies for a change of pace.

Quick & Easy Blonde Brownies differ from our Butterscotch Brownies in several ways, with the biggest difference being in how the butterscotch-like flavor develops. For this recipe we cream the butter and brown sugar, then add extra vanilla and butterscotch chips. With our Butterscotch Brownies, we melt the butter before whisking in the brown sugar to create butterscotch flavor.

Quick & Easy Blonde Brownies are also made in a larger 9″x13″ metal baking pan for a bigger batch of brownies – perfect for a family gathering, potluck, or to divide and give as gifts.

As with so many of our recipes, you can do some customizing if you like. Try using milk chocolate or dark chocolate chips. You can omit the butterscotch chips if you choose. Try peanut butter chips for a unique spin on a blondie. Or try a mixture of white chocolate and dark chocolate chips. You can’t go wrong making this quick and easy dessert bar. Equipment

  • 9×13 metal baking pan

Ingredients
  

  • cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup butter, softened (2 sticks)
  • cups brown sugar, packed
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • cup semi-sweet chocolate chips, divided
  • 1 cup butterscotch chips, divided

Instructions
 

  • Preheat oven to 350℉. In small bowl, combine flour, baking powder, and salt. Set aside.
  • In large bowl, beat butter with brown sugar until creamy. Add eggs and vanilla until just blended.
  • Beat in flour mixture unit just blended. Batter will be thick.
  • With wooden spoon, stir in 1 cup of the semisweet chips and ¾ cup of the butterscotch chips, reserving remaining chips for the top.
  • Use moistened hands to press into ungreased 9×13" pan.
  • Sprinkle remaining chips over the top and press down firmly.
  • Bake 30 minutes or until toothpick comes out clean. Cool before cutting into bars. Enjoy!
